Step 1: Prepare the base cake for chocolate mousse

1. Separate egg whites and egg yolks: Separate 2 eggs and put the egg whites and egg yolks into two clean bowls respectively.
2. Make the cake batter: In another large bowl, add 30g vegetable oil, 30ml milk, 0.6g baking powder, beat in egg yolks and stir well.
3. Mix the dry ingredients: Gradually add 10g cocoa powder and stir well. Then sift in 45g low-gluten flour and continue stirring until the batter is smooth.
4. Beat the egg whites: Add a few drops of lemon juice to the egg whites, add 60g white sugar in 3 times, and beat until wet foam (the meringue is slightly curved but not completely upright).
5. Mix the egg whites and cake batter: Gently add the whipped meringue to the cake batter in three times, and use a spatula to gently stir from the bottom to avoid defoaming.
6. Bake the cake: Pour the cake batter into a baking tray lined with baking paper and shake it gently a few times to remove bubbles. Then put it in an oven preheated to 170°C and bake for about 12 minutes. After baking, take it out, tear off the baking paper, and let it cool for later use.

3. Melt gelatin: Squeeze the softened gelatin sheets and add them to the chocolate milk mixture and stir until they are completely dissolved.
4. Whip the cream: In a large bowl, whip 250 ml of whipping cream and 60 grams of white sugar until the cream is thick and can hold its shape.
5. Mix chocolate and cream: After the chocolate liquid cools to room temperature, slowly pour it into the whipped cream and gently stir until the mixture is evenly mixed to form a smooth chocolate mousse.

Step 3: Assemble the chocolate mousse cake

1. Prepare the mousse ring and cake: Use a mousse ring and wrap a layer of aluminum foil on the bottom. Place a slice of cake in the mousse ring as the bottom layer.
2. Pour the mousse liquid: Pour half of the chocolate mousse into the mousse ring and smooth it gently.
3. Add the second layer of cake: Place the remaining cake slices on the mousse liquid, then pour the remaining chocolate mousse liquid and smooth the surface.
4. Refrigerate and set: Put the prepared mousse cake in the refrigerator for about 4 hours until the mousse solidifies.

Step 4: Decoration and Finishing

1. Demolding: Use a hot towel to gently wrap around the mousse ring to help demold. If necessary, you can use a small tool to gently trim the edges.
2. Decorate the cake: Sift an appropriate amount of cocoa powder on the surface of the mousse, and decorate with coconut flakes, silver pearl sugar and fondant roses to increase the beauty and taste.
